We want to express and move something special with this "black walnut rum". A country that has not had anything to do with rum up to now: Pakistan, more precisely the Kanshian region. In 1984, ETH Zurich planted walnut trees there (also known as black walnut). Over 380 trees were planted in the Kanshian Forest during this time. After 25 years, the trees had reached a size of around 16m and a trunk diameter (per 100cm) of 25cm, which corresponds to the average size of a walnut tree that also grows in the Kaiserstuhl (Baden). We have small wooden barrels made from this special walnut (black walnut) wood and select rums from the Caribbean mature there. The wooden barrels are 30 - 50 liters in size in order to give the rum an intense flavor. Our first tests show that this rum develops a pleasant, soft texture over the maturation period. An incredibly soft taste and a mild character that this "rum" gets from the wooden barrel.
